Rose is made out of three red varieties, found on Karst. Among them, the most important for the people of Karst is the Refosco grape variety. But there are also the Merlot and Cabernet Sauvignon - each one has a role of its own. Rose is made according to the technology of rosé wines. The varieties merlot and cabernet sauvignon remain in contact with the grape skin for over four hours, while the cider of dark colour refosco was poured away after the first hour. With controlled fermentation, we attempted to preserve as many primary notes as possible, while a partial biological de – acidification ensured, that this wine also has pleasant, soft lactic acid. The merlot wine had spent some time in barique casks. All three wines were blended in suitable parts in the month of April.
